My mom’s 80th birthday was on January 21, 2018 and she is a very gifted seamstress. She has been sewing most of her life, she made her own wedding dress. Her very first machine was a vintage Singer sewing machine (she still has). So I thought it would be perfect to make a sewing theme cake. It is not everyday someone turns 80, so I wanted to do something special to honor my mother on her birthday. Trying to replicate her Singer machine , I knew would put a smile on her face. Its made of rice treats formed into machine and covered with black fondant. Added decorations are made of fondant and painted with edible silver/gold color. I decided to make an Italian rum cake since it is a traditional Italian dessert that usually is bought and served on birthdays or other occasions. It is a three to four layer sponge cake that is soaked with a syrup made of liqueur ( I used Strega liqueur) and sugar. Then filled with alternating layers of vanilla and chocolate Italian pastry cream, topped with whipped cream icing and garnished with toasted almonds. I used modeling chocolate to make buttons, little machine, thumbnail and other decorations. Happy Birthday Mamma – you are deeply and dearly loved by all of us!
