Lemon extract is made by carefully extracting from perfectly ripe lemons. The aroma is full and complex. The flavor is bold and pure. This Pure Lemon Extract will give all your home baking the delicious flavor and fresh fragrance of natural lemons. We will start with what you will need to make the extract, two key ingredients are used: vodka and lemon rind. I used 1/2 cup of vodka and the rind of 1 lemon ….my bottle is small. Start off by peeling thin strips of rind from your lemon(make sure not to include any of the white pith because it is very bitter). Place the rind in your bottle and fill the bottle with your vodka making sure that you fill to the neck of your bottle, covering the rind.
That is it, now you have Pure Lemon Extract in the making.. Every few days, tilt the bottle upside down to gently mix the liquid inside. Leave it in a cool, dark cabinet for 6 to 8 weeks(the longer it steeps the better). Remove the rind once process is completed.
I use Lemon extract to add a splash of citrus to my beverages, cakes, muffins, frostings, pies, cookies, jams and pastries. I find that the lemon extract’s bright flavor compliments almost any dish. Its great with fish, pork, chicken dishes and blends well with herbs. It has limitless possibilities.
