Happy Mother’s Day to a woman with care, affection, sacrifice and a lot more is described with the name “Mother”. We celebrate her presence on Mother’s Day. We are here now because of our mother, who sacrificed her life for our growth and welfare. She is the most beautiful woman in the world and what better way to say I love you Mom than with flowers (or a Flower Cake). Mother’s Day will be celebrated all over the world and on this Spring day it always brings to mind endless profusion of bright flowers that add a stylish, colorful touch to any Mother’s Day cake designs. I decided to make chocolate petals from melted red chocolate candy melts to make my flower and a strawberry sponge cake filled with custard and fresh strawberry whipped cream. Frosted with real whipped cream and added a few Sixlets as decoration. A Mother is like a flower, each one beautiful and unique. Wishing my Mom and to all the mothers a Happy Mother’s Day!
Each year I try to come up with a creative dessert and more often than not, I’ll end up baking a cake. This year I baked a log cake (who says you can have a log cake only for Christmas) Easter is a wonderful holiday, to me it represents everything new, fresh and bright. Spring has arrived, the flowers are starting to bloom, the birds are singing and the energy in the air seems to be one of happiness and hope. I decided to put in as many soft pastel colors to show the memories I had growing up around Easter time. As a child my Easter mornings were spent at church and then followed with a big celebration meal and of course our chocolate Easter eggs. This EasterLogCake will shine brightly on any dessert table. Using edible garnishes and decadent chocolate ganache, the cake is made to resemble a tiny tree log. For something so impressive, this recipe actually starts off pretty simple. A basic cake is baked in a jelly roll pan before being rolled up with chocolate ganache and white chocolate pudding. Cut into this cake to reveal a festive swirl, but the real fun part comes with decoration! These cute little figurines are made of Marzipan (all edible) Add a little dash of magic to your baking and make a EasterLogCake its a new take on the traditional yule log and a great alternative to a traditional round cake! It’s the month of hearts and the color red, and nothing says Valentine’s Day like a French dessert shaped in a big heart. Paris-Brest is a classic French dessert that was created in 1891 to commemorate the Paris-Brest bicycle race. Classically, the pastry is piped in the shape of a bicycle wheel. Mine is piped in the shape of a heart in honor of Valentine’s Day. Normally creme patisserie with praline is used for Paris-Brest but I used Chantilly cream with vanilla pudding for a lighter taste. Cream Puffs are always one of those desserts that impress everybody. It’s very French and, therefore, very sophisticated in the eyes of many. But the reality is that cream puffs are incredibly simple to make once you have a good recipe on hand like my valentineparis-brest recipe. This is a showstopper dessert, a filled pastry shaped into a heart – the very essence of Paris’ romance all in one delicious treat! There are so many flavors and textures at work in this simple pastry. Crunchy toasted almonds, spongy/chewy pastry, rich but light vanilla Chantilly cream.

Wow, another year is coming to a close. It’s crazy how fast time flies and that 2016 is on it’s way out and 2017 is knocking on the door. Start off the new year on a sweet note with Raffaello Roll Cake. Raffaello cake is inspired by the Ferrero Raffaello confection. Nothing says Christmas more than these Individual Meringue Nests. Whether they are topped with different types of cream or fresh berries or my favorite sugaredcranberries. , they just added the final Christmas touch. Making these mini meringue nests is no more difficult than baking one big shell. I used the top of a glass to trace circles on parchment paper, then flipped the paper over and started piping in the circle filling completely. With this recipe you end up with eight mini nests; each makes a dessert just right for one person. These mini nests are a showstopping meringue dessert and the best part is they melt in your mouth!

Trick or Treat! As we all know Halloween is a time for tricks and treats, but this boo-tifulhalloweencake recipe
is all treat, no trick. With the month of October coming to an end and Halloween is tomorrow, this resulted to last minute baking. Honestly I have been so busy with my kids, school, household and making my daughter’s Halloween costume and once again, I still don’t know how she convinced me. Last night I realized I had no dessert planned for Halloween and started to have a panic attack (I like to plan ahead of time). I decided to see what I had in my pantry and fridge and with eggs, flour, cocoa, chocolate and whipped cream I came up with boo-tifulhalloweencake .
I made a vanilla and chocolate cake baked layer by layer
and covered it in chocolate ganache.

I know it would have been more convenient picking up a cake from my local bakery but by putting something together from scratch (limited time) and making it look and taste more unusual is a big success in my book.
Homemade, of whatever degree, goes over best when it looks homemade. All it takes is a simple personal touch.

I have seen so many fantastic tutorials out there for highly detailed cookies, they have tons of cookie cutters that I would love to play with. There are so many techniques and designs that I’m craving to try.
Sometimes when I’m decorating, I just can’t stop. I have to remind myself to keep things simple. Simple can still be beautiful, cute, fun, etc.
Simple can also make decorating much more enjoyable. I really enjoyed making and decorating these fancypumpkincookies. I didn’t go crazy with the number of colors or cookie cutters. I kept the design simple, that was truly hard. I was tempted to add more details here and there but yes, I held myself back. I’m glad I did.
